Blend watermelon cubes in two batches with 1 cup water each. Do not over-blend β 20β30 seconds is enough to break down the fruit completely.
Pour through a fine sieve for a cleaner drink. For a more rustic, fibre-rich agua fresca, skip the straining entirely β both versions are authentic.
Muddle fresh mint leaves in the pitcher bottom with the back of a spoon. Add lime juice, honey, and salt. Pour in the blended watermelon and stir well.
Refrigerate for at least 1 hour before serving β this melds the flavours and gets everything ice cold. Serve over ice with a mint sprig and lime wedge.
